This is a great tortilla filling and, because it is quick and easy to make, it is perfect for a weekday dinner.
This recipe will make enough to fill four wraps.
Hot and Spicy Beef Wraps

Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, crushed
- 500g mince beef
- 1 tbs tomato puree
- fresh chillies, chopped - as many as you need to get your desired heat. I usually use one 'hot' chilli.
Extras
- kidney beans
- tortillas
- long grain rice
- hot sauce - Tabasco or Frank's works well
- sour cream or greek yoghurt
- lettuce
- tomatoes
- avocado
Method
- Add the onion and oil to a large frying pan and fry on a medium heat until soft.
- Put a small saucepan of water on for the rice
- Add chilli and garlic to the onion and fry for about a minute.
- Stir in the tomato puree and fry for about a minute.
- Put the rice in the boiling water and follow packet instructions for timing (I use 10min boil in a bag rice).
- Put the kidney beans and their water into a saucepan and heat up.
- Add the mince, turn up the heat, and fry until all the meat is cooked.
- Meanwhile, put the wraps in the oven to warm up and chop the tomato, avocado and salad for your wraps.

- Tortilla
- Sour cream/greek yoghurt layer
- Rice layer
- Kidney bean layer
- Mince layer
- Hot sauce (lots!)
- Salad, tomato, avocado
