Lemon Curd

A quick anticipatory post so you are all ready for my Lemon Sponge Cake! You will need some Lemon Curd so I thought I would provide a basic recipe in case anyone fancied making it themselves. 


LEMON CURD

INGREDIENTS
  • 2 large lemons ~ juiced
  • 225g caster sugar
  • 75g unsalted butter ~ cubed
  • 3 eggs ~ beaten

RECIPE
  1. On a low heat, melt the butter in a pan.
  2. once melted, add the sugar, lemon juice and eggs.
  3. Continue to cook this mixture on a low heat until it thickens up.* It should be able to coat the back of a spoon.
  4. Once it has thicken, take it off the heat and leave to cool, stirring occasionally.
  5. When cool, pour into a jar and keep it in the fridge until you need it
