LEMON CURD
INGREDIENTS
- 2 large lemons ~ juiced
- 225g caster sugar
- 75g unsalted butter ~ cubed
- 3 eggs ~ beaten
RECIPE
- On a low heat, melt the butter in a pan.
- once melted, add the sugar, lemon juice and eggs.
- Continue to cook this mixture on a low heat until it thickens up.* It should be able to coat the back of a spoon.
- Once it has thicken, take it off the heat and leave to cool, stirring occasionally.
- When cool, pour into a jar and keep it in the fridge until you need it
